

As a busy mom, there are plenty of times where I find myself looking at the time and wondering, what am I going to do for dinner? We find ourselves running around, picking kids up, dropping them off, running errands, then picking kids up again, running home, doing homework to look up at the clock and remember, oh yeah, we need to get dinner started, and fast. I try to keep foods around for moments like that, that are not junk, that are filling and that I feel comfortable about putting on the table for my family. Recently I was sent some coupons to check out some foods that are just that, and that I can find at the store right around the corner from our house, which will make those nights where I have no idea what I will be cooking, easier on me! The products are from Fast Fixin', and I loved that when we went to our local grocery store, we were able to find a variety of products available to choose from! Robert loves anything chicken, so choosing something was easy! We took Robert to the store with us and he decided that he wanted to pick out the meal for the night, so we went with the Fast Fixin' Chicken Fried Chicken Breasts, mashed potato and country style gravy dinner! I have learned that if there is silence at the dinner table, then dinner is a success, and lets just say that when my husband and my kids are all silent and cleaning off their plates, I call that a success. Also, when Robert gets done with his dinner and sees the left overs then asks me if he can have a chicken sandwich for breakfast in the morning, made from the chicken left over from dinner, well that is a double success! I may not be able to try out what seemed like an amazing meal, due to my diet restrictions, but I will take it from my families opinion that they all really enjoyed the meal and that they would all love to try other products from the Fast Fixin' line of foods in the future!

Aside from the taste test with the family, I really like that the Fast Fixin' Chicken Nuggets, which were also a product the kids tried and loved, are made with 20% less fat and calories, and they are made with the best part of the chicken, the breast meat! For a tasty twist on the chicken nugget, here is a great healthy recipe that PhD nutritionist Kathy Mora wanted to share with my readers:
1. Chicken Fiesta Wrap
Ingredients:
4-5 Fast Fixin’ Chicken Nuggets
1 Spinach Tortilla (other tortilla of
choice can be substituted)
Approximate portions:
2 Tbsp Refried Beans (vegetarian or fat
free version)
1-2 tsp chopped fresh tomatoes
1 tsp chopped fresh red/purple onion
1-2 Tbsp Shredded lettuce
2 tsp Shredded cheese (Mexican
style, Monterey Jack, Cheddar, any preferred
Salsa
Preparation*:
1. Using microwave- place Fast Fixin’
Chicken Nuggets on microwave safe plate or dish and heat according to
package directions.
2. Wrap tortillas in damp paper towels,
heat in microwave ~15-20 seconds until warmed, but not stiff.
3. Place refried beans in microwave
safe bowl or shallow dish, cover and heat ~1-2 minutes.
4. Chop tomatoes and onion, set-aside
until ready for use.
5. Spread refried beans in center of
warmed tortilla, layer with tomatoes, onions, lettuce, cheese, and
chicken nuggets. Folding sides in, wrap ingredients into tortilla
like a burrito.
6. Serve warm with side of salsa.
Chicken Fiesta Wrap + Pineapple or
Mango Salsa + Orange slices + Glass of Milk = Nutritious and Complete
Meal

* Note- alternatively may heat
tortillas and chicken nuggets in oven, wrap tortillas in foil first.
Refried beans can be prepared on stove-top. Ingredients can vary
per taste and desired amount. Example, can add chopped peppers,
black olives, black bean refried beans, fruit salsa, hot sauce, etc.
