Being a parent, we sometimes find it hard to come up with new ideas when cooking. I can go through my cookbooks and I find myself cooking the same recipes over and over again. Personally, I love trying new things, and I love finding products that make trying new recipes to cook for the family, easier. Recently I was given the chance to review the new Progresso Recipe Starters. I was sent the Creamy Portabella Mushroom and the Creamy Three Cheese. With the Creamy Three Cheese, I was able to create an amazing home made mac and cheese casserole that everyone loved, and with the Creamy Portabella Mushroom, I was able to make a very tasty and creamy beef stroganoff. I found that using these two Recipe Starters from Progresso to be a very smart move, so after trying the two I was sent, I went on and decided to give the other starters a try as well. A dish that we tried that turned out to be a huge hit was the Crispy Garlic-Parmesan Chicken recipe that I got off of the Progresso Recipe Starters site, in which I used the Creamy Parmesan Basil. In all, we found that using the Progresso Recipe Starters helped with those school night meals, when we dont have the time to sit down and come up with a dish. Or when we are looking for something that is easy to prepare and cook and that the whole family enjoys. So with the back to school season in full swing, and those nights of what to cook here, give the Progresso Recipe Starters a try!

INGREDIENTS

• 4 boneless skinless chicken breasts
• 1/4 cup butter, melted
• 1 can (18 oz) Progresso™ Recipe Starters™ creamy Parmesan basil cooking sauce
• 1/4 teaspoon garlic powder
• 2/3 cup Progresso® Italian style panko crispy bread crumbs
• 2/3 cup finely shredded Parmesan or Asiago cheese
• Hot cooked pasta or mashed potatoes, if desired

Garnishes, If Desired

• Additional shredded Parmesan or Asiago cheese
• Chopped fresh basil or parsley

DIRECTIONS

1. Heat oven to 400°F. Line cookie sheet with foil; spray with cooking spray. Between pieces of plastic wrap or waxed paper, place each chicken breast smooth side down; gently pound with flat side of meat mallet or rolling pin until about 1/2 inch thick. Sprinkle chicken with salt and pepper to taste.
2. In shallow dish, mix butter, 3 tablespoons of the cooking sauce and the garlic powder. In another shallow dish, mix bread crumbs and cheese. Dip chicken into butter mixture, then dip into bread crumb mixture to coat. Place on cookie sheet.
3. Bake 12 to 15 minutes, turning once, until juice of chicken is clear when center of thickest part is cut (at least 165°F) and coating is golden brown. Meanwhile, heat remaining sauce until hot. Serve chicken with pasta and sauce. Sprinkle with additional cheese and basil.
